Eagle Nutritional Services handle homemade recipes at Rackham cooking class

As stovetops sizzle and various aromas fill the air, the Eastern Nutritional Services team take their time crafting healthy homemade meals.

This ENS Cooking Demo took place on February 20th, where the campus organization gave step-by-step guides for creating hot meals for themselves.

The dish that was prepared in this class consisted of pesto chicken and tofu, garlic and lemon pasta, and creamy kale salad, all done at Eastern Michigan University's Rackham building

This combination of foods is designed to make a balanced meal, approved by the dieticians at ENS as alternatives to fast food or typical microwaveable meals.

Professor Darlene Bellers, the Clinic Director for ENS, says that learning to cook is a valuable skill for any college student.

"Part of healthy eating is being able to cook at home..." Bellers said. "Cooking allows you to customize the foods that you want and allows you to eat healthier."

ENS's mission statement is to provide nutrition education and counseling services for people who want to change their diets and improve their physical health.

And these classes aren't just for those in attendance, as the dieticians in training use this program as practice for not only their cooking skills, but for their ability to demonstrate their abilities to someone who is willing to learn.

Along with her team, Professor Bellers enjoys cooking for the students who visit, and says that communication for the class benefits everyone.

"I think it's a really great experience for the dietetic students, not only for presentation skills, but the questions that come out of the audience are so amazing, and it puts them in a position where they have to think on the spot." Bellers said.
